SpectraZyme Gluten Digest from Metagenics is a dietary supplement that may support the enzymes in a healthy digestive system that digest wheat, barley, rye grains, and other gluten sources. The main ingredient in this supplement, prolyl endopeptidase, an enzyme that belongs to a class of serine peptidases, which are non-essential amino acids and support the normal breakdown of proteins and amino acids found in gluten.
Gluten is a mixture of proteins that contribute to the elastic properties of certain foods. An example of this is dough, bread, or pastries that rise and have a chewy texture. Within gluten, one group of protein is known as gliadin, which consists of densely packed proteins and a large number of amino acids within a low surface area to volume ratio. In a healthy digestive system, enzymes break this down. If this process is disrupted, gluten will digest into long-chain amino acid chains called oligopeptides.
